Turkey Hash

This is an old family recipe that I grew up with and it is a great way to get rid of the holiday leftovers.  The basic ingredient is  turkey, but if you have leftover dressing and gravy, add it too.

1 Stick butter

1/2 Cup flour

2 Onions (large)

2 Cups chopped celery

1 red bell pepper

1 green bell pepper

1/4 Cup fresh parsley

4 Cups chopped Turkey

1/2 Cup sherry

4 Cups chicken broth

1 teaspoon cayenne pepper

 

OPTIONAL:

2 cups Gravy

2 cups cornbread Dressing

 

Melt butter and sauté onions, bell peppers, and celery until soft 4 - 5 minutes

add parsley

add flour and continue stirring until roux darkens slightly

slowly add chicken broth to mixture until a thick soupy texture is reached

                (this may take more or less than 4 cups)

add sherry, cayenne, salt and pepper to taste

add chopped turkey

 

OPTIONAL ADDITIONS

 If you have leftover gravy, add it at this point along with 1 to 2 cups leftover dressing

 

Bring to simmer and add liquid (broth)  if necessary to reach thick hash consistency.  If it is to soupy, add additional cornbread dressing.

 

Serve over thick grits, rice, or toast
